Original Merwan's Mawa Cakes! |
This is a bit on crumbly side but the cake itself is so moist and bursting with flavours. I added some citrus zest and almond essence to liven it up. Pure heaven! Although Merwan's are simple cupcakes, I embellished mine with a little whipped cream on the top!(not in the picture! Also, I made another batch with the same ingredients in a spring form pan, not in the picture)
Mawa Cake
Ingredients
1-1/2 cups all purpose flour
1-1/2 cups sugar
1-1/2 sticks butter, softened
1-1/2 cups drained paneer
1 cup milk powder
1 tsp powdered cardamom
3 eggs
1 tsp baking powder
1 tsp baking soda
How to:
Sieve all the dry ingredients together(except sugar) in a large bowl, keep aside
Cream butter and sugar together till light and fluffy.
Add one egg at a time, incorporate all the eggs very well.
Now add the cheese.
Add the dry ingredients and mix until nicely blended, for about 2 minutes.
Line the muffin pans with liners.
Divide the batter equally in the cups and bake at 375° F. for about 35 minutes.
Makes 18 muffins.

hi..loved the recipe and tried it too..twice both the times they came out of the oven all blown up..but when left to cool,they just collapsed in the centre..and where all heavy after that..as opposed to nice and fluffy and soft and light..kindly guide me as to wat i did wrong..i whipped the ingredients in the order u mentioned in the directions in my mixie with the whipper blade at low speed...
ReplyDeleteNo vanilla essence? Grant road merwan mawa cake also have strong vanilla taste. I dont see vanilla essense in ur recipe. Is dat the ingredient which kept ur recipe from being perfect?
ReplyDeleteI don't think vanilla essence has anything to do with the recipe perfection..I like to use cardamom for flavoring...and this cake was as good as it gets..
ReplyDeleteHi, I m also big fan of B merwan's mawa cakes. And experimenting with its taste and texture. Ya you mentioned it correctly about crumbliness of their mawa cake. I m also trying to get that result. I tried with adding some rawa in the batter. But the result was not good. Your recipe sounds interesting. I ll definitely try this. Just one question - is there no need add mawa in this?
